Our new wine cellar (September 2004) is located at Quinta de S. Mateus, is and produces 300.000 bottles a year. The wine is produced without any pumps at all (there’s a 18m height difference from where the grapes enter the winery and the presses). The robot pigeuer is used, without remontage (pumping over), without the use of any yeasts, enzymes or bacteria.
